Why does New Mexico have a state cookie?

New Mexico is the first state to recognize an official state cookie.
It`s the biscochito!
And it`s especially popular this time of year as a
New Mexican holiday treat
. The New Mexico tradition dates all the way back to the Spanish settlers. Sometimes spelled bizcochito, the cookie was made official in 1989 by the New Mexico State Legislature. There are a variety of recipes, but it`s usually considered a small, anise-flavored cookie. The cookie is common at special occasions in New Mexico, including of course, the Christmas season.
