Mexican Corn Dip 2 cans Mexican corn, drained 1 Cup sour cream 1 Cup mayonnaise 1 can chopped green chilies, drained 8-10 ounces grated cheddar cheese 2-3 jalapeno peppers, chopped Mix and chill Serve with chips.

Texas Dump Cake Spray a 9x12 pan with Pam Pour one small can of crushed pineapple and one can of pie filling (any flavor) into a pan Dump a box of dry yellow cake mix over the pie filling and fruit mixture Drizzle one stick of melted butter on top Bake at 350 degrees (325 for glass) for 45-50 minutes Serve warm with Blue Bell Ice Cream.

Classic King Ranch Chicken Bake 4 chicken breasts (can boil them if summertime) Cut cooked chicken into small squares Mix 1 can of Cream of Chicken soup with the chicken pieces Add 1 can of Rotel tomatoes (try to take out green hot peppers) to the mix Mix in shredded cheddar cheese Break Tostitos tortilla chips into pieces and add to the mix Put the entire mixture into a smaller rectangle glass casserole and cover with additional cheddar cheese Cover with Saran wrap and microwave for 5 minutes

Sessions-Style Chili Brown ground meat in a large saucepan and drain the grease Add 1 can crushed tomatoes (12 oz) Add 1 envelope of chili seasoning Add 2 cans of Ranch style kidney beans Add 1 can of corn Let simmer on low for about 20 minutes Prepare white Minute rice Pour chili over rice and enjoy.  

Easy, Cheesy Lasagna Smash up 1 bar of cream cheese (cut into cubes before smashing) Mix in one 16oz. container of sour cream Cook 6 Lasagna noodles (in boiling water) Brown ground meat and drain Add 1 jar of Healthy Choice marinara sauce to the meat Butter a small rectangular casserole dish (a glass dish works best) Lay down 3 lasagna noodles in the bottom of the buttered dish Spread the meat sauce over the noodles Spread the cream cheese and sour cream mixture over the meat sauce Sprinkle cheddar cheese over mixture Repeat the last four steps Cover the dish with Saran wrap and microwave for 10 minutes.  

Baked Corn Casserole 1 can Whole Kernel Corn (drained), 1 can Cream-Style Corn, 1 pkg Jiffy Corn Muffin Mix, 1 stick Butter (melted), and 8oz. Sour Cream. Preheat oven to 350. Mix all ingredients together and bake in a greased 8 x 12” pan for 30 minutes or until pick comes out clean.

Pennsylvania Baked Corn 3 Eggs (separated), 1 can Cream-Style Corn, 2 T. Flour, 1 T. Sugar, 4 T Butter (melted), Half cup Milk, Salt and Pepper to taste. Preheat oven to 325. Set egg whites aside. Combine all other ingredients. Beat egg whites until soft peaks form and fold them into mixture. Pour into a buttered dish and bake 1 hour. Serve immediately.
